My friend Ann told me this recipe when we were walking to exercise class Monday morning. She planned to make it for lunch for herself and her husband. The only thing to remember is that avocados blacken quickly upon contact with air, so only make enough to be eaten soon. OR, you can add lemon juice to the recipe if you are going to leave it sit out as dip for several hours
Tanenbaum Avocado Spread
for two people: (recipe can be multiplied for any amount)
1 Haas avocado
1 hard-boiled egg
...finely chopped onion to taste
salt! This is one recipe where you must use salt, Ann says.
1. Mash avocado and egg together.
2. Add onions and salt.
3. Spread on two slices of bread for 2 open-face sandwiches.
