We play Marbles every Sunday night with friends. Last Sunday Kathy Lehner introduced this homemade Irish Cream, called Backwoods Bailey's. Was it good? It was all gone before I got any! I can only tell you that everyone thought it was wonderful and I can give you the recipe, straight from Kathy.

Backwoods Bailey's

1 c Irish whiskey (Kathy: I use Jamesons)
3 eggs
1 and 1/2 c whipping cream
1 c sweetened condensed milk (not evaporated!)
1 and 1/2 T chocolate syrup
1/4 tsp coconut extract

1. Blend in a food processor or blender for 1 minute.
2. Pour into bottles and refrigerate.
