Stuffing is just a handy, basic food. Many recipes use it, like Judith's Vegetable Casserole. Then, of course, there's always a need for stuffing for the holiday bird. Marianne Jones, with whom I taught school for years, gave me this recipe.
Bread Stuffing
1 stick (1/2 cup) of butter
1 and 1/2 large onions
1 and 1/2 c chopped celery
1 and 1/2 c walnut or pecan pieces
1 T sage
1 tsp thyme
1 tsp ground pepper
1 tsp salt
1 tsp celery salt
2 eggs
1 loaf wheat bread, diced
1. Melt the butter. Sauté onion and celery 5 minutes.
2. Add the rest of the ingredients except the bread.
3. Sauté 5 minutes.
4. Pour this mixture over the bread cubes.
5. Stir in the slightly beaten eggs.
Add to recipe, bake for a side dish, or stuff a bird.
