If you are trying to eat more vegetables, here's a good dish. I am a vegetable/fruit person, and am always experimenting. I came up with this dish over ten years ago, and I still make it every now and then.

Broccoli and Mushrooms

2 stalks of fresh broccoli, cut into bite-sized pieces - both flowerets and stems
a carton of fresh sliced mushrooms
half a medium onion - or to taste, sliced
2 tsp of finely chopped fresh or dried rosemary
a quarter to a half cup of unsalted sunflower nuts
freshly ground pepper to taste

1. In a large skillet, sauté the onion in olive oil until transparent, separating rings.
2. Add mushrooms, broccoli, rosemary, and nuts. Cook until broccoli is tender-crisp.
