Years ago, before I got serious about this recipe business, I didn't care of record where I got recipes unless there was a particular reason for it. This is one of those anonymous recipes in my box. You know it's good or I wouldn't have kept it.
Broccoli and Walnut Casserole
3/4 cup coarsley chopped walnuts
1 medium onion
1/2 clove garlic
1 cup brown rice
3 cups vegetable or chicken broth
1 large bunch broccoli
additional 1-1/2 cups vegetable or chicken broth
1 cup shredded cheddar cheese
1. Sauté the chopped onion and galic in Pam.
2. Cook the rice, onion, and garlic in 3 cups of broth until rice is done (about 25 minutes).
3. While rice is cooking. cut up broccoli. Sprinkle with salt and pepper and steam.
4. Put the rice mixture in the bottom of a casserole. Sprinkle the chopped nuts over the rice. Layer the broccoli over this. Cover with the shredded cheese.
5. Heat in the microwave until food is hot and cheese is melted. Serve with the extra broth, heated, to pour over.
