Here's a good meatless entrée. It's filling and satisfying. It's one of those unknown recipes; recipes that are in my recipe file, but I haven't a clue where I got them.
Brussels Sprouts Soup
2 T olive oil
1 c chopped onion
2 tsp minced garlic
5 c chicken broth
3 c water
1 c uncooked small pasta
10 oz. fresh or frozen brussels sprouts, halved
2 c diced yellow and/or zucchini squash
1 can kidney beans, drained
1 tsp oregano
1 tsp caraway seeds (optional)
1. Sauté onions and garlic for 7 minutes.
2. Add broth and water and bring to a boil.
3. Add pasta and cook 5 minutes.
4. Add remaining ingredients.
Cook 7 or 8 minutes or until pasta and vegetables are tender.
