My husband Bob likes this sweet potato recipe because it's not as sugary as many sweet potato casseroles. He makes them for holiday dinners. I make them any time.
Candied Sweet Potatoes
2 large sweet potatoes
1/4 c butter
1/3 c brown sugar
1/4 c water
1. Peel the sweet potatoes, and cut into half-inch rounds.
2. Cook the potatoes until tender, but still firm.
3. Drain potatoes well.
4. In a large, heavy, frying pan, heat the butter and brown sugar.
5. Add the potatoes, and cook and turn until brown on both sides.
6. Add the water. Cover and cook until tender. Or, cover and bake in a 300° oven until done.
