
I first got this recipe from my sister Lynne in Washington a year ago. Since then I've got it ten or twelve times. It's a wild idea, and very popular to send around on the internet. Of all those who have sent it to me, I wonder how many have actually made the cake.
I have not made it, but some of my friends have. They say it lives up to its promotions; moist, delicious, and enough cake for two.
Chocolate Mug Cake
1 large coffee mug
4 T cake flour (plain not self-rising)
4 T sugar
2 T cocoa (*if one wanted to make another flavor, omit choc and add 1/2 tsp of desired flavored extract)
1 egg
3 T milk
3 T oil
Small splash of vanilla
3 T chocolate chips, optional but it's better with chips
1. Add dry ingredients to mug, mix well with a fork.
2. Add egg, mix thoroughly.
3. Pour in milk and oil and vanilla, mix well.
4. Add chips, if using
Put mug in microwave and cook for three minutes on 1000 watts
Cake will rise over top of mug -- do not be alarmed!
Allow to cool a little; tip onto plate if desired and EAT
