A couple of years ago my friends Jane Arndt and Barb Lloyd and I were shopping around in a small town in Michigan. In the back of a shop, where it was a bit dark, we found a board with an old recipe for Coffee Cookies painted on it. Last summer Jane made a batch of the cookies. We all agreed they are “keepers,” but could use a stronger coffee flavor. She suggests either using VERY strong coffee in the recipe, or adding instant coffee powder if you want the flavor ramped up.
Coffee Cookies
3 c brown sugar
1 and 1/2 c lard
4 eggs
1 and 1/2 tsp baking soda
4 and 1/2 tsp baking powder
2 tsp vanilla
1 and 1/2 c strong coffee
6 c flour
1. Cream together the fat and sugar until well combined.
2. Beat in the eggs.
3. Sift the baking soda, baking powder, and flour together.
4. All the flour mixture alternately with the coffee to the batter.
5. Roll out the dough, and cut into rounds.
Bake at 350°
6. Frost with powdered sugar frosting.
