A few years ago, Jane Fisher passed a Red Hat Cookbook she didn't need any more on to me. Jane started my Red Hat Chapter nine years ago. She has now moved from Florida to North Carolina.

While looking through the cookbook a while back, I came upon three recipes in Jane's handwriting tucked among the pages. I emailed her about using the recipes, and she said to "go ahead!" There was this one for Corn Casserole, one for Sour Cream Muffins, and one for String Pie.

Corn Casserole

Heat oven to 350 degrees. 8-inch baking dish, do not grease.

1 15-oz can whole kernel corn, drained
1 15-oz can cream-style corn
2 beaten eggs
1/2 c margarine, melted
8 oz sour cream
8 oz corn bread mix

 

1. In a large bowl, combine all ingredients and blend well.
2. Spread in the baking dish.

Bake uncovered for one hour.
