Judy McCracken in Michigan just sent me this. She says the rhubarb beside her tool shed is going wild. So she’s digging up rhubarb recipes, and says this is a good one.
Rhubarb Cherry Cobbler
Mix together:
1 can cherry pie filling
3 c diced fresh rhubarb
1 and 1/4 c sugar
1 tsp almond extract
1. Pour the above into an UNGREASED 9x13 pan.
2. Dot with 4 T butter.
Cream together:
1/2 c shortening
1 c sugar
1 c flour
1 tsp baking powder
1/2 c milk
1. Spread over filling mixture.
Bake at 350 ° for 50-60 minutes.
