Some friends and I were at lunch one day talking about fruit desserts, and Dell French said she had a killer blueberry dessert. So she brought it the following week to the Writers Guild Hallowe'en party. Dell's husband got his share early because he knew it would be soon gone.

Blueberry Delight

a 9x13 cake pan
preheat oven to 400°

Crust:

2 c crushed graham crackers
1/2 c sugar
1/2 c melted butter

1. Mix all of the above ingredients.
2. Press the mixture into the pan.
3. Bake for 5 minutes. Cool.

Filling:

2 c firmly packed small marshmallows
1/2 c milk
1 pint whipping cream
1 tsp vanilla
3 c blueberries

1. Add the milk to the marshmallows, and melt together. (Dell: I just zap the marshmallows in the microwave and watch until half melted. I take them out, mash them with a potato masher, and zap them for about another 30 seconds.)
2. Cool.

3. Add the whipping cream and vanilla to marshmallow mix.
4. Whip until stiff.
5. Gently fold in the blueberries.

Garnish with cracker crumbs (optional)

Refrigerate.
