Ellen Shelton up in northern Florida sent me this recipe. Ellen and her husband Jim worked with us, years ago, as park rangers at Acadia National Park in Maine.
Easy Almond Cake
This recipe is perfect for a large potluck dish since it's so easy and makes two cakes.
1 and 2/3 c flour
1 and 1/2 c sugar
1 c unsalted butter, melted
2 eggs, lightly beaten
2 T almond extract
2 and 1/2 oz (about 1/2 c) sliced almonds
Preheat oven to 350°
Spray two 9-in pie pans with cooking oil.
1. In a large bowl, stir together flour, sugar, butter, eggs, almond extract.
2. Divide batter evenly between pans and sprinkle each with half of the almonds.
Bake until light brown around edges, about 30 minutes. Serve warm or at room temperature.
