Ana Fuller is in my Writers Guild. While she was recuperating from leg surgery a while back, her daughter-in-law Joanie made her this chowder. Joanie said it was quick and easy to make. Ana thought it was delicious, and gave me the recipe.

Easy Corn Chowder

2 slices bacon
2 slices chopped onion
1 and 1/2 c diced potatoes
3 c hot water
1 can creamed corn
3 T butter
1 c evaporated milk
salt and pepper to taste

1. Cut bacon into 1-inch pieces.
2. Put bacon and onion into a soup kettle, and sauté until bacon is crisp and onion is soft.
3. Add the potatoes, hot water, and creamed corn.
4. Cook until potatoes are done.
5. Add the butter, evaporated milk, and salt and pepper.
6. Heat until boiling, serve piping hot.
