Two friends sent me this recipe, Jodee Linta in Arizona and Candy Little in Kansas. They know each other, so it's been passed around. It lives up to its name. It is easy. And you can't miss with mint and chocolate!

Easy Mint Chocolate Chip Cookies

Preheat oven to 350 degrees. Grease cookie sheets or line with parchment paper.

1 pouch Betty Crocker sugar cookie mix
1 stick butter or margarine, softened but not melted
7 drops green food coloring
1 large egg
1 10-oz package Nestle's Toll House mint and chocolate chip morsels

“You Could also use 1 cup of chocolate chips and 1 cup of mint chips if you can find them; I couldn't find the mint chips out here.” Candy

1. In large bowl, combine cookie mix, softener butter, food color and egg. Stir well until completely combined and soft dough forms.
2. Stir in mint and chocolate chips. The dough will be very stiff, so a wooden spoon works best.

Bake 8-10 minutes. Cool 3 minutes in the pan. Remove cookies to wire rack to finish cooling. Store tightly covered at room temperature.
