While my husband and I worked as seasonal rangers at Acadia National Park, we lived in a motor home in a park employee camping area. Ellen and Jim Shelton lived in a travel trailer next door. Ellen is a "scratch" cook, and used to make this bread by hand. It's her own recipe, and not only nutritious and delicious, but nearly foolproof.
A friend of Ellen's, whom I don't know, adapted Ellen's bread recipe for bread machine. My husband makes this recipe frequently. It is, as I said, foolproof. You get a good loaf of bread every time. He also makes bread by hand from Ellen's original recipe, Ellen's Multi-Grain Bread.
Ellen's Bread for Bread Machine
Makes a 1 and 1/2 lb loaf
Mix together 1/4 c(or less) honey and 1 1/4 c water
Put this into machine
Mix together 2 c white flour
1 c whole wheat flour
1/3 c oatmeal
1 1/2 T dry milk powder
1 1/2 t salt
1. Pour this on top of water, then add 2 T sunflower seeds, then 2 t yeast.
2. Set machine for whole wheat bread or for medium regular bread.
If you are going to use the timer, to make a little indentation in the flour and put the yeast there so it won't get wet waiting for the machine to turn on.
