While my husband and I worked as seasonal rangers at Acadia National Park, we lived in a motor home in a park employee camping area. Ellen and Jim Shelton lived in a travel trailer next door. Ellen is a "scratch" cook, and used to make this bread by hand. It's her own recipe, and not only nutritious and delicious, but nearly foolproof.

If there's company coming, and Bob wants to serve a warm bread that will always look nice, he makes this.

Ellen's Multi-Grain Bread

2 T yeast
1 T honey
1/4 c warm water
Stir all of the above together and let sit while you put together the rest.

5 c regular white flour
4 c whole wheat flour
1 and 1/2 cups oatmeal
1/2 c sunflower seeds
1 T salt
1/2 c honey (or more)
3-4 c warm water

1. Mix dry ingredients.
2. Stir in honey, then yeast mixture.
3. Add enough water so all the flour is wet, but not too sticky.
4. Cover and let rise for an hour.
5. Turn onto floured counter, knead for about 5 minutes, adding white flour if needed.
6. Shape into 3 loaves, put in greased loaf pans.
7. Cover and let rise for 45 minutes.
8. Bake in 325° pre-heated oven about 25 minutes.
