Every February for the last five years, The Plantation gives a tea for all the local Red Hat chapters. Every year the event is catered by Emilianna's Catering. The table cream that Emilianna served for the scones was very good and the right consistency. I know that real scalded table cream can't be made or bought in this part of the world. So I stopped into the kitchen and asked Emilianna how she made it. Here's her recipe.
Emilianna's Table Cream
1 qt heavy cream
1 large package of cream cheese, very soft
4 heaping T confectioner's sugar
1. Stir the confectioner's sugar into the heavy cream, a little at a time.
2. In a mixer, blend the cream cheese into the cream mixture, a little at a time. Mix until you have a smooth product.
