While we were visiting our friends Vi and Jerry Weis in Southern Florida this winter, Vi made these crab spread cocktail snacks, which were new to me. It's a great recipe because you can make them ahead and freeze them, and only have to thaw what you wish to use.

 

English Muffin Crab Appetizer

1 stick butter
1 can lump crab meat 4.5-6 oz
1 and 1/4 T mayonnaise
1 jar Kraft Old English Cheese 5 oz
1/2 tsp garlic salt
1/2 tsp seasoning salt
10 halves English muffins

1. Melt butter and cheese in a saucepan over low heat.
2. Add mayonnaise and seasonings
3. Shred crab meat. Remove any shell pieces and cartilage.
4. Stir meat into melted cheese mixture.
5. Spread over English muffin halves.
6. Place muffin halves on a tray or plate and freeze for 30-45 minutes.
7. Store frozen muffins in freezer bags for future use.

TO SERVE

Preheat oven to 375°

1. Thaw the number of muffins you wish.
2. Cut into bite-sized wedges.
3. Bake until golden brown, about 15-20 minutes.
