Evelyn Miley brought this delicious Spanish-style salad to our Writers Guild Halloween Potluck. When I asked her for the recipe that night, she said she went home from work and "made it up" to bring. So she just told me what she did, and I took notes.

Evelyn's Bean Salad

1 can of black beans
1 can of red beans
1 can of pinto beans
2 T olive oil mayonnaise
1/4 onion, chopped
1/2 garlic clove, chopped
sliced black olives to taste
pepperoncini peppers for garnish

1. Drain, rinse, and drain again all the canned beans.
2. Mix all ingredients together.
3. Arrange a few pepperoncini on top.
4. Chill.
