My husband and I have been fighting the pounds for years. I'm constantly looking for new ways to prepare old favorites. Eggplant tends to absorb fat when fried, so I tried using just Pam-type spray to make this dish. We thought the result was delicious! Ruth
Lo-fat Fried Eggplant
1 smallish eggplant, pared and sliced
3/4 c skim milk
Panko bread crumbs
salt and pepper
1. Spray frying pan with cooking spray. Heat.
2. Dip slices of eggplant into the milk.
3. Press the slices into the Panko crumbs to bread. Don't forget the edges.
4. Place slices in frying pan and sprinkle with salt and pepper to taste.Watch carefully, they brown fast.
5. When they are nicely browned and crusty, remove from pan and serve.
