Felicia Cotich was born and raised in Australia. She met an American fellow in college, married him and moved to the U.S. When she visits her family in Australia, she brings back recipes. This is one of them. It is moist and delicious; you would never know there was no added sugar.

Diabetic Fruit Cake
2 plus pounds candied fruit (4-5 c )
1/4 c ground almonds (I use slivered almonds - Ruth)
1. Soak the above overnight in 2 c orange juice and 1/4 c brandy
2. Next morning add:
2 c self-rising flour
2-3 tsp. mixed spices (to taste: allspice, cinnamon, cloves, ginger)
Place in a 7-8 inch square pan or a loaf pan, greased.
Bake at 300 degrees for 1 and 3/4 to 2 and 1/4hours. Test for doneness.
Cool in pan.
