Many years ago, in grade school, our class exchanged letters with pen pals from overseas. My pen pal was Sinnika Koskiala. She visit us several times later in life, and we visited her. She spent a number of years working in the U.S. as a mechanical engineer.Eventually she moved to Canada, and then back to Finland, and we have lost touch. One legacy I have from Sinnika is this wonderful meat pie.
Finnish Meat Pie
1 lb ground turkey or beef, cooked and drained
1 cup mushrooms
1 cup cooked rice
1/4 cup plain yogurt
1/2 tsp each:
curry powder
paprika
basil
garlic salt (or to taste)
Mix:
1 cup warm mashed potatoes
1/2 cup oleo
1/2 cup flour
1.Mix first list of ingredients, and spread in a 9"by13" pan.
2. Spread the mashed potato mixture on top.
3. Bake at 350° until top is browned.
4. Serve with mushroom gravy.
