Fried Sweet Potatoes
2 medium sweet potatoes
half a medium onion, sliced
half a cup of walnuts or pecans, coarsely chopped
2 T maple syrup
1. Scrub, prick, and put the sweet potatoes into the microwave. Cook until just beginning to soften.
2. Meanwhile, separate the onion slices into rings and sauté in butter-flavored cooking spray.
3. Slice the sweet potatoes (leave skin on) and add to onions. Add nuts. Drizzle maple syrup over all.

Fry on medium heat until sweet potatoes are crusty brown around the edges.
