I first had this salad at a potluck while summering in Maine. Now it's family and friends favorite, and we often make it for each other's dinners. It works as a light dessert, also.

Fruit Fluff Salad

8 oz tub of Cool Whip
1 pkg.orange Jell-O (I used sugar free)
Mix Cool Whip and Jell-O together in a large bowl

ADD
l lb small curd cottage cheese
Small can mandarin oranges (drain)
20 oz can of pineapple chunks (drain)
1/4 c chopped walnuts or pecans (optional)

Stir well and refrigerate. (This is what I call a "Durable Salad." It will keep for several days in the refrigerator. Ruth)

Note: Any combination of flavored gelatin and fruit may be used. I'm partial to lemon gelatin and fresh peaches, myself. Ruth

The top may be decorated with fruit or nuts.

(Caution on Fruit Fluff Salad: Do not use fresh pineapple in the salad. In a few hours it causes the salad's consistency to break down and become very runny.)
