Ellen Shelton sent me this recipe. We visited the Sheltons in their brand new summer home in the North Carolina mountains last September. So now they winter in Florida, and summer in North Carolina.

Three Ginger Cookies

3/4 c butter at room temperature

1 c dark brown sugar

1/4 c molasses

1 egg

2 and 1/4 c unbleached flour

2 tsp ground ginger

2 tsp baking soda

1/2 tsp salt

1 and 1/2 T fresh ginger root, finely chopped

1/2 T crystallized ginger, finely chopped

 

1. Cream butter and brown sugar in large mixing bowl.

2. Beat in molasses, then egg.

3. Sift flour, ground ginger, soda, and salt together.

4. Stir dry ingredients into butter mixture with wooden spoon until blended.

5. Add fresh and crystallized ginger. Stir until well mixed.

6. Refrigerate dough, tightly covered, two hours of overnight.

 

7. Shape into 1-inch balls; roll in sugar before baking.

8. Place 2 inches apart on greased cookie sheet or cover sheet with parchment paper.

 

Bake at 350° for 6 to 10 minutes, until browned. Cool on wire rack.
