Here's a family favorite from my old aluminum recipe box. Gingerbread was a frequent dessert in our house when I was growing up. Mom topped it with whipped cream usually, and sometimes a lemon sauce. She also put raisins and chopped walnuts in it occasionally.

Gingerbread

1/2 c sugar
3/4 c molasses
1/2 c fat (oleo or butter, softened)
2 c flour
1/2 tsp cloves
1/2 tsp ground ginger
1 egg
1 tsp soda
1 c sour milk (can be soured with a tsp of vinegar)
dash salt
1 tsp cinnamon

1. Mix sugar and molasses.
2. Add fat and stir.
3. Dissolve soda in sour milk and add to mixture.
4. Sift remaining dry ingredients. Add to mix and beat for one minute.
5. Pour into 8x8 or 9x9 greased pan.

Bake at 350 degrees until a toothpick comes out clean.

Optional: Glaze with thinned lemon-flavored or plain Buttercream Frosting. Stud the top with small chunks of candied ginger.
