Ginger Salad Dressing
1 T grated peeled fresh ginger root
1 T finely chopped celery
3 T rice vinegar
2 T water
1 T toasted peanut oil
1 T soy sauce
2 tsp sugar
1 tsp fresh lemon juice
1 tsp miso (a Japanese flavor paste)
salt and pepper
