This, along with Grape Conserve and Tomato Preserves, are my favorite jams. My mother got the recipe for Ginger Pear from her mother, Florence Bruske. I can remember, as I was growing up, my parents making ginger pear. It was a job because this, along with Grape Conserve and Tomato Preserves, made a lot of jam so it would last all winter.
Ginger Pear
10 pounds of pears, peeled and diced
6 pounds sugar
1 ounce of ginger root, peeled and diced finely
Combine into kettle. Boil until thick. Put in jars and seal.
Makes 22-25 half-pints
