Judy wrote “Great!” on the top of the recipe when she sent it to me. She also notes that Candy Little likes this dish. Candy lives not far from Judy in Kansas City area, and sends us lots of recipes, too.

Judy also noted on the recipe “I threw it together early afternoon and put it in the fridge. Then I brought it to room temperature before baking.”

 

Cheddar Hash Brown Bake

Preheat the oven to 350 degrees
Butter a 2-quart baking dish

1/2 c chopped onion
1 can Campbell’s Cream of Potato Soup
8 oz sour cream
4 c frozen hash brown, slightly thawed
8 oz cheddar cheese, grated
salt to taste

1. Mix all ingredients together except half of the grated cheese.
2. Pour into baking dish.

Bake for one hour. Uncover, sprinkle with the remaining cheese and return to oven to melt cheese.
