My husband Bob is very much into bread baking. He developed this recipe for a heavy, moist brown bread which he sometimes calls peasant bread.

Bob's Hearty Brown Bread

2 and 1/2 c warm water
1 T dry yeast
1/2 c dark molasses
1 c wheat gluten
2 c whole wheat flour
1 wheat bran
1 c rye flour
1 c wheat germ
1/2 cup oat flakes
salt to taste
additional whole wheat flour as needed to form workable dough
additional oat flakes for topping

1. Stir yeast and molasses into the water.
2. Mix all the dry ingredients except the additional flour and oat flakes.
3. Combine dry mixture with yeast mixtures. Knead until smooth.
4. Let rise in bowl until size doubles.
5. Punch down and form into two loaves. Roll the loaves on the additional oak flakes.
6. Place side by side on oiled cookie sheet and let rise again for about 45 minutes.
7. Bake at 350 degrees 45 minutes or until done.

Bob's notes:
1. Spray loaves with Pam and the oat flakes will stick on better.
2. Check after 35 minutes. Some ovens are faster than others.
