Pat Henson, a writer friend who lived here in Florida, but moved a couple of years ago to Alabama, sent me this recipe. Nice warm-up for a cold day.
Italian Wedding Crock Pot Soup
12 small meat balls, cooked ahead or use frozen
6 c chicken broth
one chicken breast, chopped
1/2 c carrot, diced small
1/2 c celery, diced small
1 bunch spinach, stemmed and chopped
1 tsp chopped garlic
1 T lemon juice
1/4 c ditalini or other small pasta Add the pasta during last hour of cooking.
1. Combine all ingredients in crock pot and cook all day on low or 3 hours on high.
Sprinkle grated Romano cheese on each bowl before serving.
