Jane Blair entertained my college sorority alumnae group at her house for our December Holiday meeting. The dessert was Jane’s Peanut Butter Pie, creamy and delicious. When serving it to a group, it is easier to cut and serve if made in a 9x13 pan than in individual pie tins.

Jane Blair's Peanut Butter Pie

Makes 2 pies, or a 9x13 pan

2 c vanilla wafer crumbs
1/2 c melted margarine
2 pckgs instant chocolate pudding
3 c milk
1 10-oz container Cool Whip
8 oz cream cheese, softened
1 c confectioner’s sugar
1/2 c crunchy peanut butter
1/2 c chopped peanuts

 Crust 

1. Mix vanilla wafer crumbs with melted margarine.  Pat firmly into 9x13 glass dish or two pie plates. 
2. Bake 10 minutes in 350 ° oven. Cool.

1st Layer: 

1. Mix cream cheese, confectioner’s sugar, and crunchy peanut butter together until well blended.
2. Spread over cooled crust.
3. Refrigerate until set.

2nd Layer: 

1. Mix pudding mixes with milk until stiff, then fold in the container of Cool Whip.
2. Spread the chocolate layer onto the first layer.  Sprinkle with the coarsely ground peanuts. 
3. Refrigerate until ready to serve. 

 Chill overnight for a firm dessert.

 Garnish with whipped cream and chocolate curls if desired.
