Jim Shelton is a friend of many years. He and his wife, Ellen, worked at Acadia National Park with us, and our travel trailers were parked side by side. He's made this dish for us more than once, and it's always delicious. A small eggplant will do for two people, but I'd use a medium to large one for 4 to 6 people.

Jim's Eggplant Dish

sesame oil
olive oil
mushrooms (fresh)
onions, chopped
teryaki or stir-fry sauce
vinegar
garlic
fresh ginger/ grated
soy sauce
chopped eggplant
2-3 T tahini

cooked rice

1. Use half olive and half sesame oil in heavy pan
2. Sauté onions.
3. Add mushrooms, eggplant and everything else except the tahini and the rice.
4. Cook until done.
5. Stir in tahini

6. Serve over rice
