My neighbor, Donna Archambault, was cleaning out her recipe box, and came across a Cookie Kuchen recipe, which she thought folks would like. Donna and husband Jean winter here in Florida, and spend their summers in Maine. She got this recipe from a neighbor of hers in Maine.
Cookie Kuchen
Dough
1 and 1/2 c flour
1 stick of margarine or butter
1/2 c sugar
1 T vinegar
1 egg
dash of salt
Filling
sliced fruit such as peaches, Italian Prune Plums or peeled apples
Crumb Topping
1. Cut butter into flour until mixture is pebbly.
2. Add sugar, vinegar, egg, and salt.
3. Pat the dough into an 8" x 12" pan.
4. Layer the fruit evenly over the patted-down crust. I overlap the fruit a bit.
5. Sprinkle crumb topping over all.
Bake at 375° for approximately 30 minutes.
