People expect that Key Lime Pie will be green. Usually that's food coloring. A natural, home made Key Lime Pie is more of a yellowish color. A Key Lime is a small, very flavorful lime. Any lime juice will do if you don't have Key Limes.
Key Lime Pie is customarily served cold.
Key Lime Pie
a 9 inch graham cracker crust, baked
2 (14 ounce) cans sweetened condensed milk
1 c key lime juice or lime juice
2 whole eggs
Preheat oven to 325 degrees.
1. In a bowl, combine the condensed milk, lime juice, and eggs.
2. Whisk until well blended.
3. Pour the filling in the pie shell.
Bake for 15 minutes.
Sprinkle lime zest on top as a garnish if desired.
Chill pie in the refrigerator for at least 2 hours.
