Dell French, who is in my Writers Guild, gave me this recipe. It was a key lime day. I was having a piece of Key Lime Cake and coffee with her, when we began rambling about key lime dishes. Comments on the pie recipe are Dell's.

Key Limes are quite small fruits with an intense lime flavor. They are yellowish inside. A true key lime pie is almost a yellow color, not the eye-popping greens you often see.

Quick Key Lime Pie

l can sweetened, condensed milk (any brand)
½ cup key lime juice (gradually add and fold into condensed milk)
1 8-oz Cool Whip (slowly fold into mixture)

1. Pour into crust. (I use graham gracker crust.)

Optional—top with extra Cool Whip and coconut, nuts, graham crust mixture, lime slices---etc.

 

GRAHAM CRACKER CRUST(recipe taken from box top)

1 ½ graham cracker crumbs
¼ cup sugar
1/3 cup melted butter or margarine.

Press firmly on bottom and sides of 9” pan. Bake at 375% for 8 minutes or microwave for 1 and ½ to 3 minutes. Refrigerate for 30 minutes for a no bake crust.
