I've made this salad since forever. I have no idea where I first got the recipe. It's one of my "durable" salads, one that will last a few days in the frig, great to make when having house guests. My sister Gail suggests adding some horseradish for a bit of interest.
Lemon Jell-O and Cabbage Salad
1 pkg lemon Jell-O
1 and 1/2 c boiling water
1 T vinegar
salt
Prepare and allow to thicken slightly.
Add:
1 c finely shredded cabbage
1/2 c finely sliced cucumber (w/o seeds)
1/2 c finely chopped celery
Make in an 8x8 cake pan so it can be cut and served in squares. Top with a dollop of mayonnaise.
