I got this recipe from my good friend Judy McCracken who is a snowbird. She spends her summers in Michigan, her winters in Florida. This sauce is excellent on steamed vegetables.

Lemon Cheese Sauce

2 T butter or oleo
2 T flour
1 c milk
salt and pepper
2 egg yolks
1/2 cup shredded sharp cheese
2 T lemon juice

1. Melt butter in heavy saucepan over low heat. Add flour, stirring constantly. Gradually add milk. Cook over medium heat, stirring constantly, until thickened. Add salt and pepper.
2. Gradually stir about 1/4 of the hot mixture into egg yolks. Add remaining hot mix, stirring constantly.
3. Add cheese and lemon juice and stir a couple of minutes over low heat.

Makes 1 and 1/4 cups sauce.
