When we first moved to Florida, we lived on the west coast. "Fluff" desserts were quite the rage for a while there. I got this particular version from my neighbor, Vera Mangaudis.

Lemon Fluff

1 3-oz pkg of sugar-free lemon Jell-O
1 8-oz can of crushed pineapple in juice, drained
1 pkg of sugar-free instant lemon pudding
1 8-oz container of Cool Whip

1. Prepare the Jell-O according to package directions. Pour into a flat pan. Refrigerate. When it is set, cut into cubes.
2. Drain the pineapple (leave a little liquid) and mix into it the sugar-free lemon pudding.
3. Mix both the Jell-O cubes and the pineapple mix into the Cool Whip.

Pile onto slices of angel food or low-fat pound cake to serve.
