For all you grillers out there, here's one for you. This is from Jodee Linta in AZ, my friend from my teaching days. The comments on the recipe are Jodee's.
Lemon Honey Chicken Breasts
3 T fresh lemon juice
1 T honey
1 tsp olive oil
1 tsp soy sauce
1/4 tsp ground ginger
4 skinless, boneless, chicken breast halves
1. In a shallow bowl, combine lemon juice, honey, oil, soy sauce and ginger. Add chicken breasts, turn to coat, and let stand for 10 minutes.
2. Spray grill with nonstick cooking spray.
3. Remove chicken from marinade, reserving marinade.
4. Grill chicken for 8 to 10 minutes, turning once and brushing with the reserved marinade, or until cooked through.
5. Transfer chicken to platter and serve warm or at room temperature. Serves 4.
These chicken breasts are good cold for a picnic, or used for sandwiches, or cut into strips to add to a Caesar-type salad. I threw in a few mushrooms for good measure.
