This comes from Jodee Linta in AZ, and I have made it several times. It is delicious. Spooned over spaghetti squash, it is a complete meatless meal.

Lentil Spaghetti Sauce

1 medium onion, chopped
1 clove garlic, minced
1/4 c olive oil
1 and 1/2 c dried lentils
1 T dried red pepper flakes
4 c beef or vegetable broth
1/2 tsp dried basil
1/2 tsp dried oregano
1 can tomatoes, 16 oz
1 can tomato paste, 6 oz
1 T vinegar

1. Sauté onion and garlic in oil.
2. Add lentils, red pepper, pepper, and broth.
3. Cover and simmer for 30 minutes.
4. Add remaining ingredients and simmer until lentils are soft.
