We had these bars when visiting Donna Archambault in Maine. Donna is a neighbor of ours in Florida during the winters. She and her husband Jean summer here in Maine. That summer, we were, also summering in Maine.

Lime Cheesecake Bars

6 graham crackers, finely crushed (2 and 1/2 c)
2 T oleo, melted
1 tsp sugar
1 3-oz pkg lime gelatin (sugar-free ok)
3/4 c boiling water
1 16-oz carton cottage cheese
1 8-oz pkg cream cheese
1 8-oz pkg Cool Whip

1 Combine crumbs, oleo, and sugar.
2. Press into a 2 qt square baking dish.
3. Refrigerate.

4. Combine gelatin and water, set aside.
5. In blender: blend cottage cheese and cream cheese until smooth.
6. Whisk cottage cheese mix into gelatin, half a cup at a time.
7. Fold in Cool Whip.
8. Spoon filling over chilled crumb mix.

Cover and refrigerate for 8-24 hours, until filling is firm.
Cut into squares, top each square with a lime wedge.
