Lime Gelatin Salads are variations on a basic theme of lime gelatin and canned pineapple with whatever. I also have made it with canned pears. For me, cottage cheese is a constant in lime gelatin salads.
Lime Gelatin Salad
2 pkg lime gelatin
1 12-oz carton small curd cottage cheese
1 can of crushed pineapple
3 T mayonnaise
3 and 1/2 c boiling water
1. Drain the cottage cheese and pineapple thoroughly.
2. Dissolve the gelatin in 3 and 1/2 c boiling water in chosen bowl or pan.
3. Chill until syrupy.
4. Blend in the pineapple, cottage cheese, and mayo.
5. Chill until set.
If you are going to mold the salad:
1. Spray the mold lightly with cooking spray.
2. Pour in the chilled syrupy salad.
3. Chill until set.
4. Warm bottom of mold in warm water until salad begins to loosen.
