These are my daughter Lisa's family favorite cookies.
She originally made them for her husband's lunches in the field when he went bow hunting for deer. She gradually developed them over the years into the family favorite for all and any occasions.
Lisa's Pumpkin Chocolate Chip Cookies
2 c flour
4 tsp baking powder
1 T cinnamon
1 tsp nutmeg
1/4 tsp ginger
1/2 c margarine
1 c sugar
2 eggs, beaten
1 cup solid-pack pumpkin (NOT pumpkin pie filling)
1 c chocolate chips
1. Mix flour, baking powder, cinnamon, nutmeg, ginger. Set aside.
2. Cream shortening. Gradually add sugar.
3. Add beaten eggs and pumpkin. Mix well.
4. Stir in dry ingredients. Mix well.
5. Fold in chocolate chips
6. Chill for 2 hours or overnight.
7. Drop by tablespoonsful onto greased cookie sheets. Lisa: I use a measuring tablespoon, rounded, and scrape the dough out with a spoon.
8. Bake at 350° for 15 minutes or until edges are browning.
