A couple of Fridays ago, the Writers Guild had a party at a member's home. It was a great party with lots of food, talk, and a sing-along. Lois Jordan brought this yam dish to the party. It is delicious, and would be perfect with turkey or ham for the holidays
Lois' Yam Bake
makes a good six servings
2 c yams, diced, steamed, and mashed (A 15-oz can of yams can be used, but they make a wetter mash.)
1 large onion, chopped and sautéed to taste
1 generous c dried fruit (raisins, Craisins, chopped dates, etc.)
1 generous c chopped nuts (Walnuts or pecans are best.)
cinnamon and allspice mixed, enough to lightly flavor the dish
1 and 1/2 T lemon juice or slightly diluted lemon concentrate
1 T grated lemon peel, thin and and cut small
butter to dot the top before cooking
2 c diced fresh apple— put into bowl, cover, and refrigerate. They will be used later in the process.
The best dish for this recipe would have its own cover.
1. Fold together yams, fruits, onion, and nuts.
2. Spoon into cooking dish half the yam mix and smooth into a layer.
3. Sprinkle half the spice mix over the layer.
4. Spoon the rest of the yam mix into the dish.
5. Top with the rest of the spice mix.
6. Finish the topping with the lemon juice, lemon peel and dotted butter.
Cover and bake at 350° for 20 minutes. (or microwave 5 minutes at 100%)
Remove from oven. Fold in apples, well. Return to oven for 10-15 minutes. (microwave, 2-3 minutes)
For 9 servings, increase all ingredients by one half.
If baking uncovered, add minutes to baking time.
If freezing for a lengthy time, you might consider omitting the nuts until ready to add the apples, for a fresher taste. Mix them together before adding.
