This is a very good recipe for latkes. I got it from my neighbor, Ann Tanenbaum, after I had had some of her latkes. I have included the recipe just as she wrote it out for me.
Latkes
8 grated potatoes
4 eggs
1 and 1/2 c of water
1 pkg potato pancake mix (usually found in the kosher section of the super market)
1. I use the food processor for grating the potatoes. It is not as fine as doing it by hand, but it works. Be sure to drain off the liquid.
2. Mix all ingredients. If too loose, use a little less water.
3. Drop by soupspoonfuls onto HOT oil. I use canola oil.
4. Turn when brown and drain on paper towels.
Serve with applesauce and with sour cream.
If you have to reheat, use a hot oven, 400°, for about 15 min.
(A note on this by Ruth: Ann’s latkes were particularly crispy-edged and delicious when I had them. Ann credits warming them in the oven just before serving with their success.)
