This is a delicious Eastern version of lentil soup. It is quite spicy, so you may want to go easy on the spices to come up with what pleases you. We like spicy foods, so this version is fine for us. Ruth
Spiced Lentil Soup
1 T olive oil
1 medium yellow onion, chopped
2 garlic cloves, minced
4 stalks of celery, sliced
salt to taste
1 tsp freshly ground black pepper
1 tsp ground turmeric
1 tsp ground cumin
1/4 tsp ground ginger
1 tsp ground cinnamon
1 bay leaf
1 tablespoon tomato paste
1 lb lentils
2 qts water
6 Italian Roma tomatoes, cored and diced
1/2 c cilantro leaves, chopped
1. Saute onions in olive oil until soft.
2. Add garlic and cook one minute.
3. Add celery and cook 2 minutes until softened.
3. Add salt, pepper, turmeric, cumin, ginger, cinnamon, and bay leaf and cook 10 minutes.
4. Add tomato paste, lentils, and water and cook 45 minutes.

Stir in tomatoes and heat through.
5. Serve garnished with cilantro.
