Candy Little from Kansas sent me this recipe. I have never met Candy, but we email back and forth. She is a friend of Judy Youngdoff in Kansas, who was the college roommate of Jodee Linta now living in Arizona. Jodee taught in the classroom next to mine for many years. All of them are cookery people, and send lots of good recipes. Notes on this recipe are from Candy.

Company Crockpot Chicken

6 boneless, skinless chicken breast halves. (If fresh chicken is used, trim to equal thickness. Some frozen chicken breast halves such as the Tyson brand are usually more equal in thickness. If used, thaw and trim if needed.)

 

Packaged egg noodles

 

Sauce:

1/2 c real butter

1 packet (0.7 oz size) Good Seasons Italian salad dressing mix

2 cans cream of chicken soup- reduced sodium if you can find it

3/4 c dry white wine

1 tub (8-oz size) cream cheese with chives

 

1. Heat sauce on low, stirring frequently, until well combined.

2. Line crock pot with a liner. (Reynold's brand sells a box of 4-5 that fit an oval or round crock pot. This will save you clean-up time.)

3. Place chicken in the pot.  Layer pieces if necessary. Pour sauce over all.

4. Cover and cook on low for 4 hours. Cut a piece of chicken to check for doneness. Cook a bit longer if any chicken is still pink.

5. Taste sauce.  If it is a bit salty to your taste, add a peeled chunk of raw potato and turn off the crock pot. The contents will remain hot enough for the potato to absorb some of the saltiness.

6. Cook desired amount of egg noodles.

7. Divide the noodles among the plates and top with a chicken breast and lots of sauce.

 

The recipe makes enough sauce to use with another meal. Serve it over cooked noodles as a side dish or reheat sauce with cooked chicken tenders as my friend Judy Youngdoff did.
