We had this salad when we visited Donna and Jean Archambault in Palermo, Maine. The Archambaults live just down the street from us in Florida during the winter, and summer in Maine. The salad was all the more special when Donna made it for us, as she used fresh Maine strawberries. She says she calls it a salad, but it could also be a dessert.

Maine Strawberry Salad

Salad

2 3-oz pkgs strawberry gelatin
2 c boiling water
13 and 1/2 oz can crushed pineapple
2 ripe bananas, sliced
2 10-oz pkg frozen strawberries
2 T lemon juice

Dressing
1 c sour cream
1 tsp sugar
1/4 tsp ginger

Salad:

1. Dissolve strawberry gelatin in boiling water.
2. Add frozen strawberries. Stir until thawed.
3. Add pineapple with juice, bananas, lemon juice.

Chill in refrigerator for 5 to 6 hours.

Dressing:
Combine sour cream, sugar, ginger. Chill.
